Quick French Bread
Makes: 1 large loaf or 2 small loaves

Ingredients
- 1 ½ cups warm water (110°F/45°C)
- 2 ¼ tsp (1 packet) active dry yeast
- 1 tbsp sugar or honey
- 1 ½ tsp salt
- 3 ½ – 4 cups all-purpose flour (plus more for dusting)
Instructions
1. Activate the Yeast
- In a large bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until frothy.
2. Mix and Knead the Dough
- Stir in salt and 3 ½ cups flour.
- Add more flour as needed until the dough pulls away from the sides and is slightly sticky but manageable.
- Knead on a floured surface for 5–7 minutes until smooth and elastic.
3. First Rise (Fast Rise Method)
- Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 20–30 minutes, or until doubled in size.
4. Shape the Loaf
- Punch down the dough and shape it into 1 large loaf or 2 small loaves.
- Place on a baking sheet lined with parchment paper or lightly greased.
5. Second Rise (Optional but Recommended)
- Let the shaped loaf rise for 10–15 minutes while the oven preheats.
6. Preheat the Oven
- Preheat oven to 400°F (200°C).
7. Bake
- Slash the top of the loaf with a sharp knife (optional for a classic look).
- Bake for 20–25 minutes, until the crust is golden brown and the loaf sounds hollow when tapped.
8. Cool and Serve
- Let cool slightly before slicing. Best served warm.
Tips:
- Crispier Crust: Place a shallow pan of hot water on the lower rack while baking.
- Flour Substitution: Swap ½ cup flour for whole wheat flour for a heartier loaf.
