Blueberry / Raspberry Protein Overnight Oats

Ingredients:

  • ½ cup rolled oats
  • ¾ cup unsweetened almond milk
  • ⅓ cup nonfat Greek yogurt
  • ½ scoop vanilla protein powder
  • ¼ cup blueberries or raspberries
  • ½ tsp cinnamon
  • ¼ tsp vanilla extract
  • Lemon zest (optional)
  • Optional toppings (morning of): 1 tsp almond butter or a few almonds

Instructions:

  1. In a jar or sealed container, combine oats, almond milk, yogurt, protein powder, cinnamon, and vanilla extract.
  2. Stir until smooth. Gently fold in berries and lemon zest.
  3. Refrigerate overnight (or up to 5 days).
  4. Stir and top with almond butter or nuts before eating.
