Blueberry / Raspberry Protein Overnight Oats

Ingredients:
- ½ cup rolled oats
- ¾ cup unsweetened almond milk
- ⅓ cup nonfat Greek yogurt
- ½ scoop vanilla protein powder
- ¼ cup blueberries or raspberries
- ½ tsp cinnamon
- ¼ tsp vanilla extract
- Lemon zest (optional)
- Optional toppings (morning of): 1 tsp almond butter or a few almonds
Instructions:
- In a jar or sealed container, combine oats, almond milk, yogurt, protein powder, cinnamon, and vanilla extract.
- Stir until smooth. Gently fold in berries and lemon zest.
- Refrigerate overnight (or up to 5 days).
- Stir and top with almond butter or nuts before eating.
