Quick French Bread

Makes: 1 large loaf or 2 small loaves
Total Time: ~1 hour
Active Time: ~15 minutes

Ingredients

  • 1 ½ cups warm water (110°F/45°C)
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 tbsp sugar or honey
  • 1 ½ tsp salt
  • 3 ½ – 4 cups all-purpose flour (plus more for dusting)

Instructions

1. Activate the Yeast

  1. In a large bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until frothy.

2. Mix and Knead the Dough

  1. Stir in salt and 3 ½ cups flour.
  2. Add more flour as needed until the dough pulls away from the sides and is slightly sticky but manageable.
  3. Knead on a floured surface for 5–7 minutes until smooth and elastic.

3. First Rise (Fast Rise Method)

  1. Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 20–30 minutes, or until doubled in size.

4. Shape the Loaf

  1. Punch down the dough and shape it into 1 large loaf or 2 small loaves.
  2. Place on a baking sheet lined with parchment paper or lightly greased.
  • Let the shaped loaf rise for 10–15 minutes while the oven preheats.

6. Preheat the Oven

  • Preheat oven to 400°F (200°C).

7. Bake

  1. Slash the top of the loaf with a sharp knife (optional for a classic look).
  2. Bake for 20–25 minutes, until the crust is golden brown and the loaf sounds hollow when tapped.

8. Cool and Serve

  • Let cool slightly before slicing. Best served warm.

Tips:

  • Crispier Crust: Place a shallow pan of hot water on the lower rack while baking.
  • Flour Substitution: Swap ½ cup flour for whole wheat flour for a heartier loaf.
