Gooey-Center Chocolate Chip Cookies (12 Cookies)

Ingredients

  • ½ cup (1 stick) unsalted butter, cold and cubed
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ⅓ cups + 2 tbsp all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 cup chocolate chips or chunks
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Cream butter and both sugars until fluffy (2–3 minutes).
  2. Add the egg and vanilla, mixing until combined.
  3. Whisk together flour, baking soda, baking powder, and salt in a separate bowl. Gradually mix into the wet ingredients.
  4. Fold in the chocolate chips/chunks.
  5. Chill dough for at least 1 hour (or overnight for deeper flavor).
  6. Preheat oven to 375°F (190°C).
  7. Scoop dough into 12 balls, about 3 tbsp each (golf ball-sized, ~55–60g). Place 2–3 inches apart on a parchment-lined baking sheet.
  8. Bake 9–11 minutes, until edges are golden but centers look slightly underbaked.
  9. Optional: Sprinkle with flaky sea salt while warm.
  10. Cool 5 minutes on the sheet, then transfer to a rack. Enjoy warm and gooey!
