Collagen Chocolate Mug Cake (egg free)

Ingredients:

  • 2 tbsp all-purpose flour (or almond flour for gluten-free)
  • 2 tbsp chocolate collagen powder
  • 1 ½ tbsp cocoa powder
  • 2 tbsp sugar or a sugar substitute (like stevia or monk fruit)
  • ¼ tsp baking powder
  • Pinch of salt
  • 2 ½ tbsp milk of choice (dairy or non-dairy)
  • 1 ½ tbsp melted butter or oil (coconut oil works well)
  • ¼ tsp vanilla extract
  • Optional: A few chocolate chips or chopped dark chocolate

Instructions:

  1. Mix dry ingredients: In a microwave-safe mug, stir together the flour, chocolate collagen powder, cocoa powder, sugar, baking powder, and salt.

  2. Add wet ingredients: Add the milk, melted butter (or oil), and vanilla extract. Stir until smooth and well combined.

  3. Optional topping: Sprinkle a few chocolate chips on top if you'd like a melty chocolate finish.

  4. Microwave: Cook in the microwave on high for 60-75 seconds. Check after 60 seconds — the top should be firm but moist in the middle. Add a few more seconds if needed, but be careful not to overcook!

  5. Cool and enjoy: Let it sit for a minute to cool slightly before enjoying.
