Crust

  • 1 pie crust (homemade or store-bought), fitted into a 9-inch pie dish

  • 1/4 cup brown sugar
  • 2 tbsp all-purpose flour (to thicken)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)

  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/2 tsp cinnamon

  • 1/2 cup (1 stick) unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place your pie crust into the pie dish, crimp the edges, and set aside.
  3. Prepare the filling:
  4. In a large bowl, toss sliced apples with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
  5. Pour into prepared crust.
  6. Make the crumble topping:
  7. In another bowl, combine flour, both sugars, cinnamon, and salt.
  8. Cut in butter with a pastry cutter or your fingers until the mixture is crumbly.
  9. Assemble the pie:
  10. Sprinkle the crumble topping evenly over the apples.
  11. Bake:
  12. Place the pie on a baking sheet (to catch drips).
  13. Bake 50–60 minutes, until topping is golden and filling is bubbling.
  14. Cover loosely with foil if topping browns too quickly.
  15. Cool:
  16. Let the pie cool at least 2 hours before slicing so the filling sets.
